You really can't beet this recipe! A sweet and savory tart to start any fall fiesta!
NEED IT:
8-10 beets
1/4 cup olive oil
1/8 cup brown sugar
1 tbsp curry powder
salt and pepper to taste
1 log goat cheese
1-2 tsp honey
1 tsp dried thyme
1 tsp balsamic vinegar
1 pie crust
MAKE IT:
1. Preheat oven to 350 degrees
2. Butter a standard pie dish
3. Form pie crust into dish
4. Peel and thinly slice the beets
5. Toss the sliced beets in oil, curry powder, salt and pepper
6. Roast beets for 30 minutes - or until fork tender
7. Allow beets to cool enough to handle
8. Prepare the cheese mixture while the beets rest - stir cheese, honey, thyme and vinegar together until a thick paste forms
9. Spread a layer of the cheese mixture onto the bottom of the pie crust
10. Arrange sliced beets in a circular pattern, alternate colors if using both varieties
11. Drop small spoonfuls of cheese mixture throughout and continue to layer
12. Bake at 350 degrees for 25 minutes - until cheese and crust start to brown
13. Enjoy!
