Recipes: Peach Muffins

Peachy pickin's are stuffin' these muffins


 


NEED IT

- 4 large peaches (chopped & peeled)

- 1/2 cup soft, unsalted butter

- 1/2 cup plain Greek yogurt

- 1/2 cup dark brown sugar

- 1/4 cup white sugar

- 1 3/4 cup flour

- 2 whole eggs

- 2 teaspoons vanilla extract

- 1 teaspoon cinnamon

- 1 teaspoon baking powder

- 1 teaspoon baking soda

- 1/2 teaspoon salt

- 1/4 cup low fat milk






 

MAKE IT

1. preheat oven to 350 degrees

2. combine dry ingredients (flour, baking soda/powder, cinnamon, salt) in a bowl and set aside

3. beat butter in a standing mixing on medium speed until it becomes creamy

4. add both sugars to the butter and mix together until smooth

5. mix in yogurt, eggs and vanilla

6. slowly add in the dry ingredients

7. pour in the milk and mix on low speed until all ingredients are well blended

8. remove from mixer and gently fold in the peaches

9. spoon batter into greased muffin tin (makes 12 muffins)

10. bake for 18-20 minutes, remove from oven and allow to cool

11. EAT UP!


OPTIONAL - top with a glaze by whisking together 1 cup of powdered sugar, 1/4 cup of plain yogurt, 1/2 tsp of vanilla and 1/2 tsp of honey
