A perfectly pumpkin way to start your day!
what you'll need...
2 cups flour
2 tsp baking powder
3 Tbsp brown sugar
1/4 tsp salt
1 tsp cinnamon
1 tsp nutmeg
1/4 tsp ginger
1 cup pumpkin puree
1 cup milk (2% or whole)
1/2 tsp vanilla extract
1 tbsp vegetable oil
1 tsp local honey
2 whole eggs
2 tbsp butter
1. sift dry ingredients together in a large mixing bowl
2. stir wet ingredients into dry mixture, one at a time
3. heat butter in skillet over low heat (divide if using a small pan)
4. pour batter into skillet using 1/4 cup scoops for each pancake
5. flip once sides begin to crisp and let brown on the opposite side
6. smother with (real) maple syrup
7. top with warm apple butter (see recipe)
8. treat yo-self!
